Head Chefs

The Head Chef role provides a great deal of autonomy and as part of the pub's senior management team you'll play a truly influential role over the performance of the business. Together with the manager you'll develop seasonal menus and be responsible for locally sourcing fresh ingredients from the best suppliers, and negotiating the best deals available.

As well as being involved in a hands-on cooking role you'll also undertake a wide range of management duties and will ensure that food safety standards and procedures are second to none whilst building, leading and motivating a happy team with a strong emphasis on training and developing junior chefs.

Sous Chefs

Our Sous Chefs work very closely with the Head Chef to ensure the smooth running of a busy kitchen; cooking and working across all sections together with the opportunity to make a significant input in the menu development process with your own ideas for interesting, seasonal dishes in line with our food philosophy.

Chefs de Partie

Our Chefs de Partie have the opportunity to gain experience working across all areas of the kitchen and will generally be given responsibility to look after a particular section with the help of a junior chef.

On a daily basis you'll be supporting the Sous Chefs and Head Chef in a range of duties including fresh food preparation and cooking as well as undertaking kitchen management duties including ordering, stock control and ensuring food safety and cleaning standards are met.

Commis/Trainee/Apprentice Chefs

We see our junior chefs as our Head Chefs of the future and we have lots of opportunities at Apprentice/Trainee or Commis Chef level. If you're interested in a career in professional cookery, or you are already working towards a qualification, we'd love to hear from you. We have excellent links with local colleges, and we sponsor a number of students to gain professional qualifications in the workplace.

Running a Brunning and Price pub restaurant is no mean feat. As the manager, you will have overall responsibility for developing your own fresh food menus, choosing your beers and wines, negotiating prices with suppliers and driving a substantial and profitable business.

It sounds like a tall order doesn't it, but we'll empower you to be the boss of your own pub restaurant and really make it your own whilst receiving lots of support and advice from the central support team, as and when it's needed.

Aside from the knowledge and experience to run a successful business at senior level with an eye for detail, you'll need to be a real foodie with in-depth experience in a fresh food pub restaurant environment. It goes without saying that you'll also need a passion and sound knowledge of cask ales and wines of the world, and be entrepreneurial at heart with proven financial expertise and business acumen. Most importantly of course, you'll need to be a natural and charismatic host, enjoy looking after others and be able to lead a happy crew.

Salary packages for managers start at around £35,000 with the opportunity to earn significantly more depending on the size of the business and your experience. And all managers enjoy a share of the profits. In addition, we often provide high quality free accommodation along with many other company benefits.

Other management career opportunities

As a Deputy or Assistant Manager you'll be a key member of the pub restaurant management team and will be expected to support the manager as the 'right hand' person in all aspects of sharing responsibility for the day to day running of the pub. You will also assume responsibility when the manager is not on the premises with the help of the rest of the management team.
